So let's talk football here for a second! Or, more accurately, big game parties!!!!! They are a great way to round up all the besties, kick back and have some fun. One of my favorite pastimes this time of year since we are all trapped indoors due to the brutality cold weather. When you are surrounded by laughter and football, you almost forget it's still winter, which is a totally awesome thing!
Now, if we left it up to the guys these big game parties would end up being a pile of paper towels with slices of pizza to throw on top of them. But us women? Yeah, we like to throw a big game party with some style and a real theme! Nothing better than watching your favorite team kick some major butt surrounded by football Instagramable fabulousness so of course our water bottles are decked out and all!
I think it's safe to say that killer food is the key to a successful big game party! If the game goes the opposite way & your team gets crushed, at least you will have the memories of the deliciousness that gave you comfort during that difficult time!!!!
These adorable meatloaf cupcakes are one of my favorites to whip up for big game party guest! They are irresistible to kids – big and small, and they bake in about 15-20 minutes compared to the usual hour traditional meat loafs take. I went fancy here and piped the mashed potatoes on for the photos to impress y'all, but if you ever come by for a game, expect me to just pile the mashed potatoes on with a spoon – much faster!
is the secret ingredient to my meatloaf cupcakes! I slather the French’s ketchup glaze in between the cupcake & mashed potatoes! I choose French’s Ketchup for all my recipe needs since French’s uses real ingredients, like real sugar and high quality tomatoes, which make things like my meatloaf cupcakes taste fantastic! French’s is also free of GMOs, high fructose corn syrup, preservatives, artificial flavors and colors!!!!

INGREDIENTS
Mix all the cupcake ingredients together in a large bowl. Make sure to mix very well!
While the meatloaf cupcakes bake away mix your French’s Ketchup & brown sugar together for the glaze!
After 15-20 minutes, remove the meatloaf cupcakes from the oven and take the meatloaf cupcakes out of the pan/silicone wraps.
Take your French’s Ketchup glaze and paint the tops of your meatloaf cupcakes with it.
Take a plastic baggy and cut the tip of it off or if you have a piping bag, that works too, and load it up with the mashed potatoes.
Frost your meatloaf cupcakes with the mashed potatoes.
If you opted for chives, sprinkle your meatloaf cupcakes up and serve!

This is a really creative way to eat meatloaf, I always feel like it is not a good party food because typically it is not a finger food. But this fixes that problem. Love it!

Now, this is an perfect game day dish! I love, love, and love meatballs. I never thought about cooking them in a cupcake dish, but I am willing to try anything.
