A little over a week until Valentine's Day! If you're anything like me, you want to save yourself from that monster headache of finding a babysitter and fighting the ridiculous crowds and just cook up something fresh and delicious with your lover at home! Unfortunately, coming up with dinner recipe ideas on typical days of the week can pretty tough, so the presure is definitely on when it comes to planning that epic Valentine's Day meal!!! Thankfully for you guys, dinner recipe ideas are what I'm good at and boy do I have a delicious one for you!!! It’s time to turn up the heat in the kitchen and experience pork in a way you never have before as you chef up my famous Balsamic Pork Tenderloin using use Smithfield® Prime Fresh Pork Tenderloins from ShopRite! You definitely want to keep in mind that not all pork is created equal! So while browsing the aisles at your local ShopRite to snag all the ingredients you will need, make sure you pick up a Smithfield Prime Fresh Pork Tenderloin. Not only are Smithfield Prime Fresh Pork Tenderloins 20% More Tender (than other leading brand for Natural* Pork), Smithfield Prime Fresh Pork Tenderloins contain no artificial ingredients, No Added Hormones or Steroids and they are a product of the good ole USA! Then place your red potatoes and Vadalia onion slices around your Smithfield Prime Fresh Pork Tenderloin. Sprinkle Salt & Pepper ontop to your desired tasting. In a blender or food processor, take your Olive Oil, Balsamic Vinegar, Garlic and one branch of your rosemary and blend together! Your Balsamic mixture will end up looking like this ^^^^ Pour half of your mixture ontop of your Smithfield Prime Fresh Pork Tenderloin, Potatoes and onions. Place two branches of rosemary ontop of your Smithfield Prime Fresh Pork Tenderloin. Preheat your over to 450 and cook for 25 minutes. Then take the second half of your balsamic mixture and pour it ontop!!! Then cook for 25 more minutes or until done. Pork is done cooking when internal temperature is between 145F and 160F. **optional, I baste the Balsamic mixture over the Smithfield Prime Fresh Pork Tenderloin, Potatoes and onions every 10ish minutes to keep everything tender and to prevent the onions from drying up! Totally optional though!! Once your Smithfield Prime Fresh Pork Tenderloin has reached it's optimal cooking temperature, take out of the oven and let it sit for about 5 minutes so all the juices can settle! Then you slice this deliciousness up and enjoy!!!! Nothing better than a delicious, easy peasy Valentine's Day meal idea with very little cleanup since everything is in one pan! Good for more than just romance - I'm a single mom and this looks like a perfect school-night dinner. Paired with a salad, it's healthy but will also be perfectly delicious - and I still like the easy cleanup.

I think that's the nicest way I've seen it prepared in awhile. I bought and prepared one of these already spiced in the stores and it really didn't come out so great. This way sounds much better. Of course, homemade always is,isn't it. :) That's what I get for trying to cheat.

Pork tenderloin is not something I would ever eat since I'm a vegan and not a fan of meat. I do enjoy red potatoes though and the seasoning you used looks like a great combination. Perhaps I will use this seasoning combination in the future for some tofu or something. ;)
