I wish I could take the credit for this fabulousness, but I totally can't ;-/ A bloggy mama friend & I hit a convention not to long ago and they just happened to be having a wedding convention in the same building. Sooooo once we got all our work done on our side, we might of just wondered over to the wedding side ;-)
Let me tell you, that side was food galore!! Samples of anything and everything & mini meatloaf cupcakes might of just been on of the samples I devoured ;-) The sample at the convention was itty bitty compared to the cupcakes I made, but totally same concept.
So here ya go folks!! My version of meatloaf cupcakes! Hope your family's enjoy them as much as mine has, since the discovery ;-)
box of stuffing
your favorite mashed potatoes
*optional* gravy for toppings & flavor
Crush up stuffing
mix stuffing, ground beef and egg together. I use 1/2 box of stuffing per pound of ground beef. this could totally be upped or downed depending on how you like your meatloaf ;-)
Bake meatloaf, once in pan, for 20 minutes at 350 degrees
remove from oven
Put mashed potatoes in either a frosting bag, or you can be ghetto like myself & use a baggy. Just snip the corner of the baggy once mashed potatoes are in ;-)
frost Meatloaf's with the mashed and use corn as sprinkle :):)
The best part!!! Stuff your face & enjoy!!

These look great! I never knew savoury cupcakes even existed before now :)
I love this! The last meatloaf I made was in bulk (10 lbs of meat) and the recipe had stove top stuffing in it. It adds a good flavor and is not as icky as crackers or oatmeal for that matter. I might freeze a bunch of these little guys. They sure would cook faster!

I feel like my kids might be super sad if I tried to feed them these if they thought they were real cupcakes! They do look cute though.

We make meat loaf cupcakes all the time - they are the best! I never thought to put stuffing mix in them, though!
