Can you believe it?!?! In just a few more weeks, the kiddos will be swapping those swimsuits for all things back to school! As much as I love summer and the poolside chill days it brings, I can't help but get ridiculously excited when I see the explosion of all things back to school! Summer is just too chaotic and back to school brings the return of routine and schedules which makes this mama happy!
I don't know about your kiddos, but my daughter just doesn't do mornings! I lucked out with a kid who has loved sleep since the day she was born. It's fabulous on weekends and it was definitely amazing when she was a newborn since sleep deprived wasn't something I experienced often. But now that my daughter actually needs to wake up to hit the books daily. Ughhh!!!! I guess this is pay back because mornings can be pretty rough in our house on school days.
Like most people that detest mornings, the first thing my daughter is willing to trade for an extra few minutes is zZzzzz's is breakfast. Breakfast is the most important meal of the day, so I can't have her skipping out on all that nutrition! It's just too valuable of a meal to skip. So I had to get pretty clever on how to let her have her way to avoid World War 3 moments daily AND for her to have the nutrients she needs. My solution?
Banana Bread!!! Made with Sir Bananas®!
She can now grab a piece of banana bread on the fly! She's happy because she got that 5 extra minutes of sleep, and mama is happy because she has a full belly ready to tackle the day.

Banana Bread Ingredients
3/4 cup sugar 1/2 cup coconut oil 2 eggs 1 cup mashed ripe bananas (2-3 bananas) 1/3 cup Sir Bananas® Milk 1 teaspoon vanilla 2 cups flour 1/2 cup chopped nuts, if desired 1 teaspoon baking soda
Heat oven to 350°F. Grease loaf pan. Then in a large bowl, beat sugar and coconut oil with spoon until light and fluffy. Then beat in eggs.
Pour in Sir Bananas® Milk.
Add Vanilla.
In another bowl, smash bananas with a fork.
Stir in bananas. Make sure to mix well.
In small bowl, mix flour, nuts & baking soda.
Add banana mixture to the flour mixture.
Stir just until dry ingredients are moistened.
Pour into pan.
Bake 50 to 60 minutes or until toothpick inserted in center comes out clean.
Cool for 5 minutes, then remove from pan.
Slice Up!

My daughter likes bananas and bread .But not banana bread .This looks very moist and delicious though!

I just had bananas for breakfast, they are my favourite fruit, but I have to say I have never tried banana bread before.
